Healthy St. Patrick’s Day Snack Recipe

St. Patrick’s Day celebrations are not usually known for serving healthy, kid-friendly fare. With the big day just around the corner, there are undoubtedly many slabs of sodium-packed corned beef being boiled, carbo-loaded scones being baked, and kegs of beer being rolled into their rightful positions all across the country.

Celebrate St. Patrick’s Day the healthy way with a Green Monster Smoothie!

Not exactly what you’d want to feed your kids (especially the beer). So how can you allow your kids to get into the holiday spirit in a wholesome way? With this creative, kid-approved, and – most of all – healthy St. Patrick’s Day snack recipe: the “Green Monster Smoothie.”

With just a few simple ingredients and a blender, the kids get a sweet-tasting treat in a fun, green color and you get the satisfaction of knowing you’ve successfully incorporated spinach into one of their snacks. That should be enough to make everyone want to do a jig for joy!

Green Monster Smoothie

1 ½ cup skim milk
½ cup plain yogurt
2 very ripe bananas (the riper they are, the sweeter they are)
2 cups loosely packed baby spinach
1 tablespoon honey

Combine all ingredients in blender until blended. Pour and enjoy!
Makes 4 cups.
